Industry There is a large variety of agricultural products being grown throughout the prefecture from the southern Mino region to the northern Hida region, and Gifu farms are able to supply markets with fresh produce all year round. In the southwestern plains, rice cultivation is popular due to the warm climate. In the cooler summer climates of the high altitude plateaus in the central, eastern and northern regions of Gifu, cultivation of Kashu (summer/autumn) tomatoes, spinach and summer daikon(Japanese radish) are popular. Dairy produce, as well as Hida beef, also cultivated in the mountainous north, are renowned all over Japan. The fisheries industry in Gifu Prefecture is blessed with clear waters and an ideal environment for aquaculture, where the fresh water fisheries primary product is Ayu (sweet fish) and the aquaculture farms produce rainbow trout and Amago salmon.At the same time, Gifu has a long history as a center of production. 19% of all manufacturing plants are concentrated in this area, the highest in all of Japan. Fashion, ceramics, furniture, cutlery, woodwork, paper, plastics and food manufacturing industries are also characteristic to Gifu.
